Firstly, they have to find containers to pour the soy sauce in but it can’t be filled fully in order to keep it safe during transportation. This takes too much time which could be used for something more important.
Now, let’s imagine another scenario. The same order with the same problem, but this time you have the soy sauce in small sealed containers which can be easily added to the order by waiters/waitresses. Cooks can do their own work and no one has to worry whether soy sauce is going to survive transportation – it definitely will.
